Yug Restaurant opens its doors for the first time in the year 1963. A couple of entrepreneurs see the opportunity to serve Vegetarian food in Mexico City, where people knew little of this way of eating and vegetarian restaurant were virtually nonexistent. Now we can say with pleasure that Yug restaurant is one of the largest contributors to the vegetarian diet in Mexico.
The first years were very difficult and people saw the restaurant as a freak. I guess this was due to the lack of knowledge about vegetarianism and the myths that is not a balanced diet. It was thought (even now there are people who believe) that meat is required as protein source. We now know that several plant foods can provide us with protein (legumes, soybeans, textured soy, tofu or soy cheese). A vegetarian can also consume milk, cheese and some eggs (in a naturits diet you should not
eat milk, dairy products or eggs). Another myth is that vegetarian food is not tasty, you have to eat at Yug in order to destroy this myth.
If there was such difficulty in starting a restaurant of this kind so why do it? In general terms there are two reasons to be vegetarian:
- 1. For health issues.
- 2. For conviction, or respect for life.
In the case of this young couple both were the reasons which made them keep the restaurant open. Thanks to this convictions we can enjoy a delicious vegetarian meal. Over time the clientele has been growing this is our motivation to continue improving the taste of the dishes that we offer every day.
